There was a request for some of the recipes I used for the marinades for my freezer meals. Here are two. I'm not posting the curry marinade recipe because I am not sure if it will be good. I've never used it and after I mixed it up and poured it into the bags of chicken I had second thoughts. So, we'll see and if it's tasty, I'll post it later.
Thai Peanut Marinade (I found this online but can't for the life of me remember where, sorry)
1/2 c hot water
1/2 c creamy peanut butter (preferably no sugar added)
1/4 c chili paste (I used Sriracha)
1/4 c soy sauce
2 T vegetable oil
2 T white vinegar
4 cloves garlic, minced
2 t fresh ginger, minced
1/4 t red pepper (I omitted this)
3 lbs. cubed chicken
Mix hot water and peanut butter together until smooth. Add remaining 7 ingredients and stir. I used two freezer bags with approximately 2 pounds of chicken in each and I had enough marinade easily for the 4 pounds.
Greek Marinade (again, online and can't give you a reference. I wrote the recipe down and put the rest out of my mind)
1 c olive oil (I actually used only 1/2 cup and I think it was sufficient)
1/4 c lemon juice
3 cloves garlic, minced
2 T Dijon mustard
2 T dried oregano
1 T fresh thyme (or 1 t dried)
2 T fresh parsley (I omitted this as I wasn't sure how it would freeze)
1 t dried rosemary
1 t salt
2 lbs. cubed chicken
Mix 1-9 together. Add to chicken.
Flat Iron Asian Steak Marinade (this is the Pioneer Woman's recipe, if you press me I'll find a link for it. :))
1/2 c soy sauce
1/2 c sherry (I didn't have sherry on hand so I used red cooking wine)
1/4 c honey (again, out of honey, used 1/4 c brown sugar)
2 T sesame oil
2 T minced ginger
2 T garlic, minced
2 t red pepper flakes (I used Sriracha instead, love that stuff)
2 Flat Iron Steaks
Mix together 1-7 and pour over steaks.
