Freezer Meals Part II

As I previously posted, I was going to work on doing some parts of freezer meals.  My goal had been to do all the cooking/prep in one day.  That has not happened.  So, here's what I have done so far.

  • 10 pounds of chicken, cubed and marinated (Thai Peanut Chili, Greek, and Curry)
  • 2 Flank Steaks, marinated (Asian Marinade)
  • 40 Meatballs (give or take) enough for 4 meals for our family
Between a horrible cold and continued morning/afternoon/evening sickness this is all I've managed to get done.  It has actually worked out better this way (who knew?) since I am able to lay everything flat and freeze it in the amount of freezer space I have.  Once the items are frozen through I can transfer them to my chest freezer and organize them.  

So, what I have left to do...
  • Make beans (pinto, red and black), cool and bag to freeze
  • Make pizza dough, divide and freeze
  • Make pot stickers and freeze
I am figuring that I have parts for roughly 25-30 meals (or will once I'm completely finished with this process).  I had planned on roasting or simmering a couple of whole chickens for the meat and the stock.  Frankly, I forgot to put it on my shopping list and now that I'm in the midst of this process, it may have been too much anyway.  I may wait until my next major grocery trip to get two of those bad boys and do them then.  If I'm really brave I might get a picture of my freezer once I'm done with this to show you how to  fit this much stuff in a small chest freezer and still be able to find things.  :)

I can't tell you how glad I am you posted this! My goal before the baby is born is to make 12-15 freezer meals. But looking at your ideas, I might be going about it in the wrong way. I've been putting together one dish meals and freezing them. They all have to be baked. But putting marinated meat in bags and making dough are just good ideas.
It has been a bit overwhelming doing one small meal at a time, then doing something totall different. So..thanks.

Way to go Sarah! Are any of the recipes you've been doing (like the marinades, pot stickers, etc) online? I've never made pot stickers, but Stephen and I both really like them.
