Funk

I've been in a Christmas funk, a blogging funk, a general funk. Sorry. Here are some fun things for your reading/viewing pleasure. *Clementine is now walking. Daniel has video on his phone. I do not. She's up to 5-6 steps at a time, she gets herself to standing on her own in the middle of the floor and is generally pleased as punch to be able to do this new trick. Big girl. *If you don't read Betsy's blog, you should hop over and listen to this song. It's lovely and made me cry. *I've made some incredibly yummy Christmas treats for teachers this year. I will post the recipes at a later date. For now, I'm giving you the very best sugar cookie recipe. You must make these. They are divine. I always double this recipe. Sour Cream Sugar Cookies 3 1/4 c flour 1 t baking soda 1/2 t salt 1/2 c butter 1 c sugar 1 egg 1 1/2 t vanilla 1/2 c sour cream Combine all dry ingredients. In a mixer, cream together butter and sugar until nice and fluffy. Add egg and vanilla until combined. Add sour cream. It will look horrific. It's okay. Add the flour mixture and mix until just incorporated. Wrap in two round disks and refrigerate for at least 30 minutes. When ready to roll, preheat oven to 400 degrees. Roll cookies out to between 1/4-1/3" thick. Cut with cookie cutters, place on cookie sheets lined with parchment and bake for 12 minutes, no more, no less. (Okay, a little less if they are super tiny.) Chill and frost with your favorite cookie frosting. Alternatively, you can put sprinkles on the cookies before baking and they will look super sweet and taste just as yummy. (Okay not just as yummy as with frosting but, super yummy.) Sorry you've been feeling funkish lately. I've been kind of blah myself & I think funk is a good word for it. Thanks for the happy thoughts & new recipe, though. Can't wait to try it once the dust settles from the holidays. Here's to the new year & a new start! Merry Christmas too :)
